Let me explain what I learned so far.
It is no accident that many of us have enjoyed all sorts of bread, buns, bagels, potatoes (baked, fries), noodles (spaghetti, udon), and other such foods. As it turns out, they are products of agriculture- the thing that helped humans obtain more food that grows in abundance and doesn't spoil easily, the thing that allowed global population to explode, and also the thing that has made many of us fat, weak and sick for a long time and especially today. Meat, veggies and eggs often had to be consumed a lot faster, or otherwise preserved in some way to make them last a while. Now, around the world, this was rarely a problem for the upper classes who had a steady supply of these healthy, highly nutritious yet highly perishable food items. It was not an issue for them at all. Example would have been patricians in Rome, sultans in the East, medieval European kings with wild game forests reserved just for them... the list goes on. Now, back in the old days when both the nobility (through war and sport) and the common people (through field work) were very physically active daily, both remained fairly fit regardless of what their nutritional cornerstone was. Fast forward to today and the fact the vast majority of people enjoy a somewhat sedentary lifestyle, and it suddenly becomes obvious that carbs- the food of the masses of days gone by- is a poor cornerstone of any diet.
Therefore, high carb food items have played a role in the past where they allowed a safe supply of nutrients for the growing populations around the world, bringing us to a huge global population today. It is therefore no wonder that a plate full of potatoes or rice, or a side of bread with your meal have been a staple in many households around the world. In addition, however, this also tells us that consuming this type of food became a culture thing because people would rather call it culture than admit that most of our ancestors were not nobility or upper classes- they were farmers who ate tons of carbs because meat, healthy fats and veggies were reserved for those far above their station. Also, persisting in this cultural norm today is very bad for your health unless you are extremely physically active and you burn it off.
Therefore, my suggestion to everyone is to think more about eating like kings and feeling the benefits. Lots of protein, healthy fats and vegetables are a fountain of youth and many people know it- myself included :) Leave the culture of poverty behind and embrace the thing which used to be reserved for kings, but is now available to everyone!
