Here are some delicious recipes I have earmarked for the days between Xmas and NYE. I love dining out and supporting restaurants, but learning how to cook has nevertheless been one of my most rewarding experiences that paid dividends in amazing food experiences and money saved over time :) So, if your area ends up locking down, you may want to take matters into your own hands and make something delicious to keep your spirits up.

*I am adding some boneless chicken breast or thighs to this one that I like to partially air fry after coating them with some oil and garlic salt so they work great with this Thai curry when I add the meat to it and finish cooking it all.

Now yes, sure, you may have noticed that these are dishes where rice or pasta take up a decent portion of each dish. Personally, besides the fact that home cooked meals are the freshest, healthiest and most delicious (when you make food, you are in control of your own wellness), I feel that pasta and rice, if portioned out a little more carefully than we normally care to do, totally put the comfort in comfort food and personally they make me happy. During this pandemic, I had the chance to look at life, goals and what I really want and I have learned to respect and appreciate the little things in life all over again. I have some friends who do live alone and then they say they do not feel like cooking just for themselves because they are only one person. I have been hearing that a lot and, to me, it seems to come from a detachment from your own self. Normally I remind people in my life who are single these days that cooking for yourself beats getting takeout or delivery because the time you save by not cooking will rarely be used for something more rewarding in this day and age.
